on the menu: seasoned potatoes and veggies

We got a 10lb bag of potatoes at the market for under $2... what to do with all these potatoes?!?

washed, peeled and cubed them
coated with about 1 teaspoon of extra virgin olive oil
dosed with a package of Liptions Onion Soup, mixed well
sprinkled some cayenne spice
place in shallow dish (if you're using foil to line the dish, don't forget to put some oil on it!)
in the oven it went to bake for about 40 minutes at 450 degrees (or until cooked/brown) checking on them every 20 minutes or so and giving them a quick mix around.

chopped up an onion
bell pepper
mushrooms
zucchini 
tomato
sprinkled with extra virgin olive oil and a dash of salt and pepper OR your favorite rub
broiled for about 15 minutes

and there's our healthy, easy preparation, fairly quick baked dinner!
